Ingredients

The base

The vegetables

  • ½ teaspoon minced thyme
  • ¼ cup cut up red bell pepper
  • 1 cup sliced okra

Instructions

  1. Sauté onions, garlic, and thyme in oil for about 1 minute.
  2. Add okra and red bell pepper, cooking for an additional 2 minutes.
  3. Stir in warm water and coconut milk, bringing the mixture to a boil.
  4. Gradually whisk in the cornmeal, stirring constantly to avoid lumps.
  5. Reduce heat and cook until thickened, adding more water if needed.
  6. Cover and let it cook for about 10 minutes.
  7. Add butter and adjust consistency with more water if desired.
  8. Transfer to a wet bowl to form a ball, let set, then serve warm.
