Cozy Multigrain Porridge

Ingredients

The base

  • 1 tablespoon extra virgin coconut oil
  • cups steel cut oats
  • ½ cup raw buckwheat groats
  • ½ cup quinoa

The liquids

  • 3 cups boiling water
  • 3 cups milk of your choice, warmed to a simmer

The flavorings

  • 2 teaspoons ground cinnamon
  • ¾ teaspoon ground cardamom
  • ¾ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract

The additions

  • ¼ cup dried currants (or other dried fruit)

Instructions

  1. Grease a 9 x 13 baking dish with some coconut oil and set aside.
  2. Heat the remaining coconut oil in a large pot over medium heat and add the spices, stirring until fragrant.
  3. Add the oats, quinoa, and buckwheat to the pot, stirring to coat and toast for about 4 minutes.
  4. Slowly add the boiling water, stirring well, and scrape the bottom of the pot if needed.
  5. Once the grains have absorbed some water, gradually add the hot milk while stirring frequently.
  6. When the porridge has absorbed all the milk and the grains are cooked to your liking, stir in the currants and vanilla.
  7. Transfer the mixture to the greased baking dish and smooth it out, then let it cool at room temperature for about an hour.
  8. Cover and refrigerate until completely cool, then cut into 10 portions.
  9. To serve, reheat one portion in a saucepan with a splash of milk or water, stirring until hot and uniform.
