Cozy Multigrain Porridge

dried currants (or other dried fruit)
Instructions
- Grease a 9 x 13 baking dish with some coconut oil and set aside.
- Heat the remaining coconut oil in a large pot over medium heat and add the spices, stirring until fragrant.
- Add the oats, quinoa, and buckwheat to the pot, stirring to coat and toast for about 4 minutes.
- Slowly add the boiling water, stirring well, and scrape the bottom of the pot if needed.
- Once the grains have absorbed some water, gradually add the hot milk while stirring frequently.
- When the porridge has absorbed all the milk and the grains are cooked to your liking, stir in the currants and vanilla.
- Transfer the mixture to the greased baking dish and smooth it out, then let it cool at room temperature for about an hour.
- Cover and refrigerate until completely cool, then cut into 10 portions.
- To serve, reheat one portion in a saucepan with a splash of milk or water, stirring until hot and uniform.
