Ingredients

The oats

  • 1 cup steel-cut oats
  • 3 cups water
  • 1 cup milk of choice
  • 1 tablespoon coconut oil or unsalted butter
  • ΒΌ teaspoon salt

Optional mix-ins

  • to taste ground spices (e.g., cinnamon)
  • to taste dried fruit (e.g., cranberries, chopped dates)
  • to taste toasted chopped nuts (e.g., walnuts)
  • to taste lemon or orange zest

Instructions

  1. Combine water and milk in a large saucepan and bring to a simmer over medium heat.
  2. Melt coconut oil or butter in a skillet over medium heat, then add the oats and toast for about 2 minutes until golden and fragrant.
  3. Stir the toasted oats into the simmering liquid and reduce heat to maintain a gentle simmer.
  4. Cook for about 20 minutes, stirring occasionally, until thick.
  5. Add salt and continue to simmer until almost all liquid is absorbed, about 10 more minutes.
  6. Remove from heat, stir in any desired mix-ins, and let rest for 5 minutes before serving.
  7. Portion into bowls and add toppings as desired.
