Savory Steel Cut Oatmeal

Instructions
- Combine water and milk in a large saucepan and bring to a simmer.
- Melt butter or warm olive oil in a skillet, then add oats and toast for about 2 minutes.
- Stir the toasted oats into the simmering water and milk mixture, reduce heat, and simmer for 20 to 25 minutes until thick.
- Stir in salt and continue to simmer until most liquid is absorbed, about 10 minutes.
- Remove from heat and let rest for 5 minutes before serving.
- Season to taste with additional salt and pepper, and stir in any desired mix-ins.
- Portion into bowls and add toppings as desired.
