Ingredients

The base

  • 3 cups water
  • 1 cup neutral-flavored milk
  • 1 tablespoon unsalted butter or olive oil
  • 1 cup steel-cut oats
  • ¼ teaspoon salt

Seasoning and toppings

  • to taste freshly ground black pepper
  • optional grated cheese or nutritional yeast
  • optional sautéed veggies or greens
  • optional sun-dried tomatoes
  • optional toasted chopped nuts or seeds
  • optional fried/poached/scrambled eggs
  • optional lightly dressed fresh greens

Instructions

  1. Combine water and milk in a large saucepan and bring to a simmer.
  2. Melt butter or warm olive oil in a skillet, then add oats and toast for about 2 minutes.
  3. Stir the toasted oats into the simmering water and milk mixture, reduce heat, and simmer for 20 to 25 minutes until thick.
  4. Stir in salt and continue to simmer until most liquid is absorbed, about 10 minutes.
  5. Remove from heat and let rest for 5 minutes before serving.
  6. Season to taste with additional salt and pepper, and stir in any desired mix-ins.
  7. Portion into bowls and add toppings as desired.
