Instructions
- Heat olive oil in a small saucepan over medium heat.
- Add shallot and cook until softened.
- Stir in oats and grated garlic, then add water and salt.
- Bring to a boil, reduce heat, and simmer for 15 to 20 minutes, stirring occasionally.
- Once thick and creamy, season with salt and pepper to taste.
- Remove from heat and portion into bowls.
- Top with sautéed vegetables, eggs, scallions, avocado, and microgreens.
- Serve with hot sauce and a squeeze of lemon juice.
