Ingredients

The base

  • 1 tablespoon extra-virgin olive oil
  • ¼ cup finely chopped shallot
  • ¾ cup steel-cut oats
  • 1 clove garlic
  • cups water
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper

Toppings

  • to taste sautéed spinach and/or mushrooms
  • 2 soft boiled eggs or poached eggs
  • to taste chopped scallions
  • to taste avocado slices
  • to taste microgreens
  • to taste hot sauce
  • 1 lemon wedge

Instructions

  1. Heat olive oil in a small saucepan over medium heat.
  2. Add shallot and cook until softened.
  3. Stir in oats and grated garlic, then add water and salt.
  4. Bring to a boil, reduce heat, and simmer for 15 to 20 minutes, stirring occasionally.
  5. Once thick and creamy, season with salt and pepper to taste.
  6. Remove from heat and portion into bowls.
  7. Top with sautéed vegetables, eggs, scallions, avocado, and microgreens.
  8. Serve with hot sauce and a squeeze of lemon juice.
