Ingredients

  • 1 clove garlic, minced
  • ½ tsp grated fresh ginger
  • 4 pieces mushrooms, sliced
  • 1 tsp butter
  • 1 cup vegetable broth
  • ½ cup old-fashioned rolled oats
  • ½ cup spinach, chopped
  • ½ tsp toasted sesame oil

Instructions

  1. Mince the garlic, grate the ginger, and slice the mushrooms.
  2. Sauté the garlic and ginger in butter over medium heat for 1-2 minutes.
  3. Add the mushrooms and sauté until they have softened.
  4. Pour in the vegetable broth and bring it to a boil.
  5. Once boiling, add the rolled oats and stir to combine.
  6. Reduce heat to medium-low and let the oats simmer for about 5 minutes until thickened.
  7. Chop the spinach and stir it into the oats along with the toasted sesame oil.
  8. Taste and add salt if needed, then serve hot with your favorite toppings.
