Instructions
- Mince the garlic, grate the ginger, and slice the mushrooms.
- Sauté the garlic and ginger in butter over medium heat for 1-2 minutes.
- Add the mushrooms and sauté until they have softened.
- Pour in the vegetable broth and bring it to a boil.
- Once boiling, add the rolled oats and stir to combine.
- Reduce heat to medium-low and let the oats simmer for about 5 minutes until thickened.
- Chop the spinach and stir it into the oats along with the toasted sesame oil.
- Taste and add salt if needed, then serve hot with your favorite toppings.
