Ingredients

The oatmeal

  • 2 cups rolled oats
  • 4 cups water
  • 1 Tbsp avocado oil
  • 2 Tbsp butter or vegan butter
  • Tbsp Kikkoman Traditionally Brewed Less Sodium Soy Sauce
  • ½ tsp cracked black pepper
  • 1 Tbsp chopped fresh sage
  • 4 large eggs
  • ¼ cup sliced green onions

The vegetables

  • 1 cup sliced cremini mushrooms
  • 12 spears asparagus
  • 4 cups fresh baby spinach

Instructions

  1. Boil water in a pot and add oatmeal, then reduce heat and simmer until desired texture is reached.
  2. In a skillet, heat oil, soy sauce, and black pepper over medium heat, then sauté asparagus and mushrooms for 3-5 minutes.
  3. Add spinach and sage to the skillet and sauté until spinach is wilted.
  4. Remove vegetables and cook eggs to preference in the same skillet.
  5. Once oatmeal is cooked, mix in butter if desired, then divide into bowls.
  6. Top oatmeal with sautéed veggies and a fried egg, then sprinkle with green onions if using.
