Instructions
- 1. Heat a skillet over medium-high heat and spray with cooking spray.
- 2. Sauté the mushrooms and kale until the mushrooms are soft and the kale wilts.
- 3. Cook the oatmeal according to package instructions.
- 4. Poach the egg.
- 5. In a bowl, combine the oatmeal, Greek yogurt, and salt, stirring until fully mixed.
- 6. Add the crumbled bacon, kale, and mushrooms to the bowl and mix well.
- 7. Top with the poached egg and sprinkle with red pepper flakes before serving.
