Florentine Oatmeal Bowl

The oatmeal base

The sautéed vegetables

low-sodium seasoning blend

Instructions
- Heat the olive oil in a skillet and sauté the onion and garlic for 2 minutes.
- While the onion is cooking, combine oats and water in a large microwavable bowl and cook for 3 minutes.
- Add the tempeh bacon and seasoning blend to the skillet, sautéing for an additional 2 minutes.
- Add the sliced mushrooms to the skillet and sauté for another 2 minutes.
- Add the chopped greens and sauté for an additional 2 minutes.
- Divide the cooked oatmeal into 2 bowls and top each with half of the vegetable mixture.
- Serve immediately.
