Florentine Oatmeal Bowl

Ingredients

The oatmeal base

  • 1 cup uncooked old-fashioned oats
  • 2 cups water

The sautéed vegetables

  • 1 teaspoon extra virgin olive oil
  • ¼ onion diced
  • 1 clove garlic, minced
  • 6 slices tempeh bacon
  • ½ teaspoon low-sodium seasoning blend
  • 1 cup mushrooms, sliced
  • 2 cups chopped greens

Instructions

  1. Heat the olive oil in a skillet and sauté the onion and garlic for 2 minutes.
  2. While the onion is cooking, combine oats and water in a large microwavable bowl and cook for 3 minutes.
  3. Add the tempeh bacon and seasoning blend to the skillet, sautéing for an additional 2 minutes.
  4. Add the sliced mushrooms to the skillet and sauté for another 2 minutes.
  5. Add the chopped greens and sauté for an additional 2 minutes.
  6. Divide the cooked oatmeal into 2 bowls and top each with half of the vegetable mixture.
  7. Serve immediately.
