Ingredients

The base

  • 1 cup Old Fashioned Oatmeal
  • cups broth or water

The toppings

  • ¼ cup minced red onion
  • 4 slices turkey bacon, diced
  • 2 eggs
  • ¾ cup grape tomatoes, halved
  • 1 avocado, sliced

Instructions

  1. Spray a saucepan with oil and add minced red onion and diced turkey bacon. Cook until the bacon is browned.
  2. Add the oatmeal and broth (or water) to the pan, stirring gently. Cook for about 5 minutes over medium heat.
  3. While the oatmeal is cooking, fry the eggs in a separate skillet to your desired doneness.
  4. Once the oatmeal is ready, divide it into serving bowls and top with the fried egg, halved grape tomatoes, and sliced avocado. Serve warm.
