Instructions
- Spray a saucepan with oil and add minced red onion and diced turkey bacon. Cook until the bacon is browned.
- Add the oatmeal and broth (or water) to the pan, stirring gently. Cook for about 5 minutes over medium heat.
- While the oatmeal is cooking, fry the eggs in a separate skillet to your desired doneness.
- Once the oatmeal is ready, divide it into serving bowls and top with the fried egg, halved grape tomatoes, and sliced avocado. Serve warm.
