Ingredients

The base

  • ½ cup rolled oatmeal
  • ½ cup low sodium chicken broth
  • ½ cup water
  • ½ cup egg whites
  • ½ teaspoon coconut aminos (or low sodium soy sauce)

The toppings

  • 1 large egg
  • 2 slices turkey bacon
  • 1 scallion thinly sliced

Instructions

  1. Boil water in a small pot, add eggs, and cook for 4-5 minutes for hard-boiled eggs.
  2. Drain and cool the eggs in ice water, then peel and set aside.
  3. In a saucepan, combine oatmeal, chicken broth, and water, and cook over medium heat until liquid is absorbed.
  4. Add an ice cube to the oats, then slowly stir in egg whites and cook for an additional 2-3 minutes over low-medium heat.
  5. Stir in coconut aminos or soy sauce, then transfer to a bowl.
  6. Cook turkey bacon in a skillet until golden brown.
  7. Top the oatmeal with the sliced hard-boiled egg, crumbled turkey bacon, and scallions.
