Savory Slow Cooker Oatmeal

Ingredients

The oatmeal

  • cups gluten free rolled oats
  • 1 cup diced peeled squash or sweet potato
  • 1 tbsp butter or olive oil
  • 2 tbsp flaxseed (optional)
  • 1 tsp minced garlic
  • 1 tsp sea salt
  • a pinch black pepper
  • ½ cup sliced cherry tomatoes
  • ¼ cup Parmesan or nutritional yeast
  • 1 tsp red pepper flakes
  • ¾ cup broth
  • 2 cups plain almond milk or coconut milk unsweetened
  • ½ to 1 cup water (as needed)

The crispy bacon

  • ounces uncured nitrate free bacon strips
  • ¼ cup sliced red onion

The toppings

  • as desired sliced avocado
  • as desired steamed spinach
  • as desired microgreens
  • as desired red pepper flakes
  • as desired Parmesan shavings
  • as desired cooked crispy bacon and onion
  • a pinch pepper
  • optional fried or poached egg

Instructions

  1. Combine the oats, diced squash, tomatoes, butter or oil, flaxseed, garlic, seasonings, milk, broth, and Parmesan in the slow cooker and mix well.
  2. Set the slow cooker to high for 3 hours or low for 5 hours, stirring occasionally.
  3. If the oatmeal thickens, add more milk or water as needed during the last hour of cooking.
  4. Preheat the oven to 350°F and line a baking tray with foil.
  5. Place the bacon strips and sliced onion on the tray and bake for 15 minutes or until crispy.
  6. Reserve some bacon grease and stir it into the oatmeal before serving.
  7. Serve the oatmeal in bowls and add your desired toppings.
