Ingredients

The oats

  • 3 cups water
  • 1 cup plant milk
  • 2 tbsp vegan butter or olive oil
  • 1 cup Bob's Red Mill steel-cut oats
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp umami powder
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes

The toppings

  • as desired Roasted Red Pepper
  • as desired Kale seasoned with salt and oil
  • as desired Chopped Tomatoes
  • as desired Avocado
  • as desired Kalamata Olives
  • as desired Corn Tortillas
  • as desired Vegan Feta
  • 1 cup Greek Yogurt mixed with 1 tsp mustard

Instructions

  1. 1. Heat a large saucepan on medium and bring the water and milk to a gentle boil.
  2. 2. In a large pan, add the butter or oil and heat until bubbling. Add the oats and toast for 3 minutes until golden and fragrant.
  3. 3. Add the oats to the boiling milk and water, stir, reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
  4. 4. While the oats are cooking, prepare your toppings.
  5. 5. Add all the spices to the oats, stir, and cook for an additional 5 minutes.
  6. 6. Portion the oats into bowls and top with your desired toppings.
