Ingredients

The Oatmeal

  • 2 cups unsweetened almond milk
  • 1 cup old-fashioned oats
  • ¼ teaspoon salt

The Toppings

  • ½ tablespoon olive oil
  • 6 spears asparagus
  • 2 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon crushed red pepper flakes
  • 2-4 pieces cherry tomatoes
  • 2 teaspoons chopped fresh parsley

Instructions

  1. Heat the almond milk in a saucepan until it simmers.
  2. Stir in the oats and salt, and cook for 5 minutes while stirring occasionally.
  3. Remove from heat and cover to keep warm.
  4. In a skillet, heat olive oil over medium-high heat and cook the asparagus until crisp-tender.
  5. Remove the asparagus and crack the eggs into the same skillet.
  6. Cook the eggs until the whites are firm and the yolks have started to set.
  7. Divide the oatmeal into bowls, top with a fried egg, and season with salt, black pepper, and red pepper flakes.
  8. Add the asparagus, tomatoes, and parsley on top before serving.
