Instructions
- Heat the almond milk in a saucepan until it simmers.
- Stir in the oats and salt, and cook for 5 minutes while stirring occasionally.
- Remove from heat and cover to keep warm.
- In a skillet, heat olive oil over medium-high heat and cook the asparagus until crisp-tender.
- Remove the asparagus and crack the eggs into the same skillet.
- Cook the eggs until the whites are firm and the yolks have started to set.
- Divide the oatmeal into bowls, top with a fried egg, and season with salt, black pepper, and red pepper flakes.
- Add the asparagus, tomatoes, and parsley on top before serving.
