Ingredients

The base

  • ¾ cup cooked brown rice
  • ½ tbsp maggi liquid seasoning

The toppings

  • 2 eggs eggs
  • cup cottage cheese or plain Greek yogurt
  • ¼ cup mixed fresh herbs (like dill and parsley)
  • ¼ cup pickled onions
  • 1 tbsp chili crunch or crisp oil
  • 1 tbsp sesame seeds
  • pinch salt
  • pinch pepper

Instructions

  1. Layer the cooked brown rice mixed with maggi liquid seasoning at the bottom of a bowl.
  2. Add cottage cheese or Greek yogurt on top, followed by fresh herbs and pickled onions.
  3. Poach the eggs by simmering water in a pot, adding vinegar, and gently dropping in the eggs.
  4. Cook the eggs for about 3 minutes for runny yolks, then remove and place on a paper towel.
  5. Top the bowl with the poached eggs, drizzle with chili crunch and sesame seeds, and season with salt and pepper.
