Ingredients

The oatmeal

  • ½ cup steel cut oats
  • 2 cups almond milk
  • ½ Tbsp coconut oil
  • ½ Tbsp peanut butter
  • tsp salt

The toppings

  • 1/2 overripe mashed banana
  • 1 Tbsp maple syrup

Instructions

  1. Combine oats and almond milk in a saucepan and bring to a boil.
  2. Reduce heat to medium-low and simmer for 15 minutes, stirring occasionally.
  3. Once thickened, turn off the heat and let it sit.
  4. Stir in mashed banana, coconut oil, maple syrup, peanut butter, and salt until smooth.
  5. Add desired toppings and serve immediately.
  6. For meal prep, store in the fridge and reheat with a splash of almond milk.
