Ingredients

The oats

  • 1 cup steel cut oats
  • 3 ½ cups water
  • a pinch salt
  • ½ cup milk (almond milk or soy milk)
  • 1 teaspoon vanilla extract

Toppings

  • cinnamon
  • dried fruit
  • fresh fruit
  • nuts

Instructions

  1. Bring water to a boil in a large pot.
  2. Add steel cut oats and salt, then stir.
  3. Reduce heat to medium-low and cook for 30 minutes, stirring occasionally.
  4. When oats thicken, add milk and vanilla, stirring together.
  5. Cook for an additional 10 minutes.
  6. Add cinnamon and any desired toppings.
  7. Serve hot or cool and portion into containers for reheating later.
