Coconut Peach Porridge

Ingredients

The porridge base

  • 1 cup quinoa
  • 2 cans coconut milk
  • 2 cups applesauce
  • 4 cups frozen organic peaches
  • 1 tsp vanilla extract
  • 1 cup shredded coconut

For serving

  • a pinch of salt
  • 2 to 4 tbsp coconut sugar
  • to taste extra peaches
  • to taste cinnamon
  • to taste more coconut sugar

Instructions

  1. Soak the quinoa for about a minute or two, then strain it.
  2. In a crock pot, add the soaked quinoa, coconut milk, applesauce, frozen peaches, vanilla extract, and shredded coconut.
  3. Set the crock pot to low for 8 hours.
  4. Before serving, add a pinch of salt and coconut sugar to taste.
  5. Top with extra peaches, cinnamon, and more coconut sugar if desired.
