Coconut Peach Porridge

Instructions
- Soak the quinoa for about a minute or two, then strain it.
- In a crock pot, add the soaked quinoa, coconut milk, applesauce, frozen peaches, vanilla extract, and shredded coconut.
- Set the crock pot to low for 8 hours.
- Before serving, add a pinch of salt and coconut sugar to taste.
- Top with extra peaches, cinnamon, and more coconut sugar if desired.
