Creamy Peaches and Coconut Quinoa Oatmeal

Instructions
- Rinse quinoa under running water until the water runs clear.
- In a saucepan, combine quinoa, amaranth, young coconut water, 1 cup almond milk, and salt. Bring to a boil, then lower heat, cover, and simmer for 10-12 minutes until liquid is absorbed.
- Remove from heat and stir in shredded coconut, peach chunks, and vanilla extract. Let sit covered for 5 minutes.
- Dilute whey protein in 2 tbsp coconut water and stir into the warm cereal.
- Serve in bowls and garnish with coconut cream or yogurt and peach slices if desired.
