Creamy Peaches and Coconut Quinoa Oatmeal

Ingredients

  • ½ cup quinoa
  • ¼ cup amaranth
  • 1 cup young coconut water
  • cups almond milk
  • ¼ tsp salt
  • 2 tbsp unsweetened shredded coconut
  • 1 piece peach, peeled and cut into chunks
  • 1 tsp pure vanilla extract
  • 1 scoop vanilla flavored whey protein (35g)
  • 2 tbsp young coconut water

Instructions

  1. Rinse quinoa under running water until the water runs clear.
  2. In a saucepan, combine quinoa, amaranth, young coconut water, 1 cup almond milk, and salt. Bring to a boil, then lower heat, cover, and simmer for 10-12 minutes until liquid is absorbed.
  3. Remove from heat and stir in shredded coconut, peach chunks, and vanilla extract. Let sit covered for 5 minutes.
  4. Dilute whey protein in 2 tbsp coconut water and stir into the warm cereal.
  5. Serve in bowls and garnish with coconut cream or yogurt and peach slices if desired.
