Ingredients

The Quinoa

  • ½ cup quinoa, rinsed well and drained
  • 1 cup light coconut milk from a carton
  • 2 teaspoons brown sugar
  • ¼ teaspoon almond extract

For Serving

  • to taste fresh berries
  • to taste toasted coconut
  • to taste splash additional coconut milk
  • to taste honey or agave syrup
  • to taste additional brown sugar if desired

Instructions

  1. Combine rinsed quinoa, coconut milk, brown sugar, and almond extract in a medium pot.
  2. Stir the ingredients and bring to a boil.
  3. Reduce heat to low, cover the pot, and simmer, stirring occasionally.
  4. If the mixture bubbles over, crack the lid to release steam.
  5. Cook for 10-15 minutes until most liquid is absorbed and quinoa is soft.
  6. Add more liquid if needed for desired consistency.
  7. Serve hot topped with fresh berries, toasted coconut, and a splash of coconut milk.
  8. Drizzle with honey or agave syrup and sprinkle with brown sugar if desired.
