Instructions
- Combine rinsed quinoa, coconut milk, brown sugar, and almond extract in a medium pot.
- Stir the ingredients and bring to a boil.
- Reduce heat to low, cover the pot, and simmer, stirring occasionally.
- If the mixture bubbles over, crack the lid to release steam.
- Cook for 10-15 minutes until most liquid is absorbed and quinoa is soft.
- Add more liquid if needed for desired consistency.
- Serve hot topped with fresh berries, toasted coconut, and a splash of coconut milk.
- Drizzle with honey or agave syrup and sprinkle with brown sugar if desired.
