Toasted Coconut and Almond Oatmeal

Ingredients

  • 2 cups coconut water
  • 1 cup natural almond milk
  • cups rolled oats
  • ½ cup toasted coconut
  • ¼ cup sliced almonds

Instructions

  1. In a saucepan, bring coconut water and almond milk to a boil.
  2. Add rolled oats, stir, and return to a simmer before reducing heat to low.
  3. Cover and simmer for 8 to 10 minutes, stirring occasionally.
  4. While oats are simmering, toast sliced almonds in a non-stick pan until golden and fragrant.
  5. Once oats are tender and liquid is mostly evaporated, stir in toasted coconut and almonds, reserving some for garnish.
  6. Serve immediately, garnished with remaining coconut and almonds, and add a splash of almond milk if desired.
