Ingredients

The oatmeal

  • ½ cup rolled oats
  • cup canned lite coconut milk
  • 1 tablespoon almond butter
  • 1 tablespoon maple syrup
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • a pinch sea salt

Optional toppings

  • nuts
  • fresh fruit
  • dried fruit
  • seeds
  • shredded coconut
  • nut butter
  • maple syrup or honey
  • chocolate chips

Instructions

  1. Combine all the ingredients in a pot over medium-low heat.
  2. Stir until the mixture begins to thicken, about 2-3 minutes.
  3. Remove from heat and transfer to a bowl.
  4. Add your choice of toppings and enjoy.
