Ingredients

The oatmeal

  • 1 cup rolled oats
  • 1 tbsp maca powder
  • ½ scoop vegan protein powder (optional)
  • ¼ cup soy or coconut yogurt
  • ¼ tsp pink Himalayan salt
  • ½ juice of lemon
  • 1 tbsp agave nectar
  • 1 cup plant-based milk
  • 1 cup water (plus more as needed)

The toppings

  • 1 small banana (sliced)
  • 1 small orange (peeled)
  • 1 tbsp agave nectar
  • ¼ cup soy yogurt
  • ½ cup blueberries (or other berries of choice)
  • 1 tbsp peanut butter (or any other nut butter of choice)
  • 2 large Brazil nuts (chopped)
  • 2 tbsp dark chocolate (chopped)
  • 2 tbsp goji berries

Instructions

  1. Combine the oats, maca powder, protein powder, yogurt, salt, lemon juice, agave nectar, and plant milk in a saucepan.
  2. Bring the mixture to a simmer over low-medium heat.
  3. Cook for 5-7 minutes, gradually adding at least 1 cup of water as needed.
  4. For the caramelized fruit, place banana and orange slices in a non-stick frying pan with agave nectar.
  5. Cook the fruit for about 2 minutes on each side over high heat until golden brown.
  6. Serve the oatmeal immediately with the caramelized fruit and other toppings.
