Salted Caramel Banana Oatmeal

Ingredients

The oatmeal

  • 2 cups gluten free rolled oats
  • 3 cups water or dairy free nut milk
  • 1 tbsp molasses

The toppings

  • ½ bag Sejoyia Salted Caramel Coco Roons, crushed
  • 2 bananas sliced into ½ inch coins
  • 1 tbsp coconut sugar (to caramelize the bananas)
  • ¼ cup chopped dairy free chocolate
  • 1 tbsp coconut oil or avocado oil (to cook the bananas)
  • to taste shredded coconut (optional)

Instructions

  1. 1. Coat a non-stick pan or cast iron skillet with coconut oil.
  2. 2. Slice the bananas and set them aside.
  3. 3. Heat the pan over low/medium heat.
  4. 4. Sprinkle the bananas with coconut sugar and coat lightly on both sides.
  5. 5. Add the banana coins to the pan and flip after 3-5 minutes until charred.
  6. 6. Remove the bananas from the pan once cooked and set aside.
  7. 7. In a medium saucepan, combine oats, water or milk, and molasses, and stir well.
  8. 8. Cook the oats over medium heat for about 10 minutes until fully cooked.
  9. 9. Roughly chop the chocolate while the oats are cooking.
  10. 10. Serve the oatmeal in bowls and top with caramelized bananas, chocolate, crushed Coco Roons, and shredded coconut if desired.
