Quinoa Porridge

Ingredients

The porridge

  • 1 cup dry quinoa
  • 1 can (13.5 oz) coconut milk
  • ΒΌ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • a pinch salt
  • 2 tablespoons maple syrup

Optional toppings

  • to taste extra milk
  • to taste fresh berries

Instructions

  1. Soak the quinoa in water for at least 1 hour, then drain and rinse.
  2. In a saucepan, combine the drained quinoa, coconut milk, water, cinnamon, vanilla, and salt.
  3. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until tender.
  4. Remove from heat, stir in maple syrup, and adjust seasoning if needed.
  5. Serve in bowls with additional milk and toppings as desired.
