Instructions
- Soak the quinoa in water for at least 1 hour, then drain and rinse.
- In a saucepan, combine the drained quinoa, coconut milk, water, cinnamon, vanilla, and salt.
- Bring to a boil, then reduce heat and simmer covered for about 15 minutes until tender.
- Remove from heat, stir in maple syrup, and adjust seasoning if needed.
- Serve in bowls with additional milk and toppings as desired.
