Quinoa Pumpkin Porridge

dry quinoa, soaked in water for up to 24 hours

Instructions
- Soak the dry quinoa in water for at least one hour, or up to 24 hours in the fridge.
- Drain and rinse the soaked quinoa well.
- In a saucepan, combine the drained quinoa with 1¾ cups of water and bring to a boil.
- Cover the saucepan, reduce the heat to low, and cook for 15 minutes until the liquid is absorbed.
- Stir in the pumpkin, cinnamon, ginger, cloves, and maple syrup, adjusting flavors as needed.
- Serve warm with any additional toppings if desired.
