Quinoa Pumpkin Porridge

Ingredients

  • 1 cup dry quinoa, soaked in water for up to 24 hours
  • ½ cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • a pinch ground cloves
  • 3 to 4 tablespoons pure maple syrup

Instructions

  1. Soak the dry quinoa in water for at least one hour, or up to 24 hours in the fridge.
  2. Drain and rinse the soaked quinoa well.
  3. In a saucepan, combine the drained quinoa with 1¾ cups of water and bring to a boil.
  4. Cover the saucepan, reduce the heat to low, and cook for 15 minutes until the liquid is absorbed.
  5. Stir in the pumpkin, cinnamon, ginger, cloves, and maple syrup, adjusting flavors as needed.
  6. Serve warm with any additional toppings if desired.
