Ingredients

Porridge Mix

  • cup old-fashioned rolled oats
  • cup raw, unsalted pumpkin seeds
  • cup raw, unsalted sunflower seeds
  • cup chia seeds
  • 1 tablespoon pumpkin pie spice or chai spice mix
  • ¼ cup maple syrup
  • 1.5-2 cups almond milk or oat milk

Toppings

  • ¼ cup blueberries
  • 1 tablespoon drippy peanut butter
  • to taste chia seeds
  • to taste salt
  • to taste butter

Instructions

  1. Grind oats, pumpkin seeds, and sunflower seeds to a coarse powder using a grinder or food processor.
  2. In a small pot, combine the ground mixture with chia seeds, spices, maple syrup, and milk, then stir.
  3. Cover and simmer on medium heat for about 10 minutes, stirring often.
  4. Serve in bowls and top with blueberries, peanut butter, chia seeds, and salt.
