Ingredients

Porridge Base

  • 2 tablespoons almond flour
  • 1 tablespoon Bob's Red Mill Golden Flax Meal
  • ¾ cups water
  • ½ teaspoon pumpkin pie spice
  • 1 pinch salt
  • 1 large egg (beaten)

Toppings

  • 2-3 drops vanilla extract
  • 2 tablespoons canned pumpkin
  • 1 tablespoon low carb brown sugar or sweetener
  • 1 tablespoon heavy cream
  • 1 tablespoon butter

Instructions

  1. Combine the first five ingredients in a small pot and heat over medium-high.
  2. Once it simmers, reduce heat to medium and whisk until thickened.
  3. Remove from heat and gradually whisk in the beaten egg.
  4. Return to medium heat and whisk quickly until thickened again.
  5. Remove from heat and whisk for an additional 30 seconds.
  6. Stir in the remaining ingredients, taste, and adjust seasoning as needed.
  7. Garnish with your favorite toppings and enjoy.
