Ingredients

Porridge Base

  • 2 tablespoons almond flour
  • 1 tablespoon Bob's Red Mill Golden Flax Meal
  • ¾ cups water
  • ½ teaspoon pumpkin pie spice
  • 1 pinch salt
  • 1 large egg, beaten

Toppings

  • 2-3 drops vanilla extract
  • 2 tablespoons canned pumpkin
  • 1 tablespoon low carb brown sugar or sweetener
  • 1 tablespoon heavy cream
  • 1 tablespoon butter

Instructions

  1. Combine the first five ingredients in a pot and heat over medium-high.
  2. Once it simmers, reduce heat to medium and whisk until thickened.
  3. Remove from heat and slowly whisk in the egg.
  4. Return to medium heat and whisk until thick again, then remove from heat.
  5. Whisk in the remaining ingredients and adjust seasoning to taste.
  6. Garnish as desired and enjoy.
