Ingredients

The base

  • 1 cup jasmine rice
  • 1 tbsp coconut oil
  • a dash of salt salt
  • ½ cup coconut milk or cream
  • 1 tbsp maple syrup or honey
  • to taste tbsp cinnamon

The toppings

  • ¼ cup chopped nuts
  • 1 cup pomegranate seeds

Instructions

  1. Rinse the jasmine rice and soak it for 10 minutes.
  2. Cook the rice according to the instructions, adding coconut oil and salt.
  3. Once cooked, transfer the rice to a bowl and mix in half of the pomegranate seeds, cinnamon, coconut cream, and maple syrup.
  4. You can eat it immediately or let it cool in the fridge.
  5. Before serving, top with the remaining pomegranate seeds and chopped nuts.
  6. Add more coconut milk and cinnamon if a thinner porridge is desired.
