Coconut Sunflower Porridge

Ingredients

  • teaspoons flax seeds
  • ¼ to ½ cup walnuts
  • ½ cup unsweetened coconut flakes
  • ½ cup water
  • teaspoon sea salt
  • 1 tablespoon unsweetened sunflower seed butter
  • a few drops stevia (optional)

Instructions

  1. Spread the coconut flakes on a cookie sheet and place in the oven.
  2. Turn the oven on to 350°F and toast the coconut for about 10 minutes, watching closely to prevent burning.
  3. Grind the flax seeds, walnuts, and toasted coconut in a dry blender or food processor.
  4. Add the ground mixture to a bowl, then puree the water, salt, sunflower seed butter, and stevia if using.
  5. Heat the liquids to a simmer, then pour over the ground mixture and stir to combine.
