Ingredients

The porridge

  • 2 tablespoons coconut flour
  • 2 tablespoons golden flax meal
  • ¾ cup water
  • pinch salt
  • 1 large egg, beaten

The toppings

  • 2 teaspoons butter or ghee
  • 1 tablespoon heavy cream or coconut milk
  • 1 tablespoon low carb brown sugar or sweetener

Instructions

  1. Combine the coconut flour, flax meal, water, and salt in a small pot over medium heat and stir.
  2. Once it begins to simmer, reduce the heat to medium-low and whisk until it thickens.
  3. Remove from heat and gradually whisk in the beaten egg.
  4. Return to heat and whisk until the porridge thickens again.
  5. Remove from heat and whisk for an additional 30 seconds before adding the butter, cream, and sweetener.
  6. Serve with your choice of toppings.
