Coconut Peanut Butter Oatmeal

Ingredients

  • ½ cup rolled oats
  • cup coconut milk
  • 1 cup regular milk or water
  • 1 pinch salt
  • 2 tablespoons shredded sweetened coconut
  • 1–2 tablespoons flaxseed meal
  • 1 tablespoon brown sugar
  • 1 tablespoon peanut butter

Instructions

  1. Cook the oats with coconut milk, regular milk or water, and salt in the microwave for about 2 minutes.
  2. Stir in the brown sugar and let it stand until it thickens.
  3. Add the shredded coconut and flaxseed meal, then sprinkle with extra coconut and top with peanut butter.
  4. Heat in the oven or microwave briefly to melt the peanut butter.
