Walnut & Coconut Porridge

Ingredients

The base mixture

  • 1 cup walnuts
  • ½ cup unsweetened shredded coconut
  • ¼ cup pumpkin seeds
  • ¼ cup almond meal
  • 2 tbsp chia seeds
  • 2 tsp cinnamon

The sweetening mixture

  • 6 pieces pitted dates
  • cup water

Instructions

  1. Soak the dates in water overnight.
  2. In the morning, blend the walnuts, shredded coconut, pumpkin seeds, almond meal, chia seeds, and cinnamon until finely ground.
  3. Add the soaked dates and their soaking water to the blender and puree until smooth.
  4. Heat the date puree until it just begins to boil.
  5. Pour the hot date water over the nut and seed mixture and stir until combined.
