Ingredients

The porridge base

  • 2 cups water
  • 2-3 cups coconut milk
  • ½ stick cinnamon
  • ½ teaspoon salt
  • 1 cup yellow cornmeal

The flavorings

  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • ½ cup sweetened condensed milk
  • to taste optional sweeteners (sugar, honey, coconut sugar, brown sugar, etc.)

Instructions

  1. Combine water and coconut milk in a saucepan with the cinnamon stick and bring to a boil.
  2. Gradually whisk in the cornmeal while stirring to prevent lumps.
  3. Reduce heat and simmer until thickened, about 15 minutes.
  4. Stir in vanilla extract, nutmeg, and sweetened condensed milk.
  5. Adjust the consistency with more coconut milk or water if needed, then serve hot.
