Ingredients

The smoothie

  • cup whey protein powder
  • 1 tablespoon cocoa powder
  • ½ cup almond milk
  • 1 tablespoon coconut oil
  • to taste sweetener
  • 3 cups crushed ice
  • teaspoon xanthan gum or glucomannan powder

The toppings

  • ½ cup raspberries
  • ¼ cup walnuts, chopped
  • 2 tablespoons pomegranate arils

Instructions

  1. Pour the almond milk into a blender.
  2. Add the protein powder, cocoa powder, sweetener, and thickener if using.
  3. Add the ice on top and blend.
  4. With the blender running, add the melted coconut oil and continue blending until it almost doubles in volume.
  5. Taste and adjust sweetness if necessary.
  6. Pour into a bowl and top with the fruit and nuts.
