Ingredients

The filling

  • 4 large Grilled Portobello Mushrooms
  • 8 pieces corn or flour tortillas
  • optional Adobo sauce from a can of chipotles in adobo
  • to taste Pickled red onions
  • to taste Cilantro
  • to serve wedge Lime

The salsa

  • to taste Diced mango
  • to taste Diced avocado
  • to taste Cilantro
  • to taste Diced red onion
  • to taste Chiles
  • to taste Lime juice

Instructions

  1. Grill the portobello mushrooms until tender and charred.
  2. If desired, brush the grilled mushrooms with adobo sauce for spiciness.
  3. Prepare the avocado salsa by mixing diced mango, avocado, cilantro, red onion, chiles, and lime juice in a bowl.
  4. Assemble the tacos by placing grilled mushroom strips in warmed tortillas.
  5. Top with avocado salsa, pickled red onions, and cilantro.
  6. Serve with lime wedges.
