Ingredients

  • 1 lb zucchini, grated
  • 1 teaspoon salt
  • 1 clove garlic, finely minced
  • 2 tablespoons green onions, finely sliced
  • 2-3 teaspoons jalapeño, chopped (optional)
  • ¼ cup cilantro, chopped
  • 1 teaspoon lime zest
  • ½ teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 extra large egg
  • ½ teaspoon baking powder
  • ½ cup cheddar cheese, grated
  • ½ cup panko bread crumbs

Instructions

  1. Grate the zucchini and sprinkle with salt, letting it drain in a strainer.
  2. After draining, squeeze out excess moisture using a clean towel.
  3. In a bowl, mix garlic, green onions, jalapeño, cilantro, lime zest, cumin, smoked paprika, and egg.
  4. Add baking powder and cheese to the mixture, then stir in the drained zucchini and panko bread crumbs.
  5. Heat oil in a skillet over medium heat and form the mixture into patties.
  6. Cook the patties for about 4 minutes on each side until golden brown.
  7. Serve with chipotle mayo or lime crema.
