Instructions
- Grate the zucchini and sprinkle with salt, letting it drain in a strainer.
- After draining, squeeze out excess moisture using a clean towel.
- In a bowl, mix garlic, green onions, jalapeño, cilantro, lime zest, cumin, smoked paprika, and egg.
- Add baking powder and cheese to the mixture, then stir in the drained zucchini and panko bread crumbs.
- Heat oil in a skillet over medium heat and form the mixture into patties.
- Cook the patties for about 4 minutes on each side until golden brown.
- Serve with chipotle mayo or lime crema.
