Apple Sausage Stuffed Acorn Squash

Instructions
- Preheat the oven to 375°F.
- Place the prepared acorn squash on a baking sheet, flesh side down.
- Bake for 30-40 minutes, or until the squash is fork tender.
- In a large skillet, add the sausage and cook until browned, breaking it up with a wooden spoon.
- Add the onion and diced apple to the skillet and sauté for 3-4 minutes.
- Add the spinach and fresh thyme, sautéing until the spinach is wilted, about 2-3 minutes.
- Stir in the parmesan cheese and mix everything together.
- Once the acorn squash is cooked, remove it from the oven and switch the oven to HIGH Broiler.
- Flip the squash over and stuff it with the apple sausage mixture.
- Broil for 5 minutes, or until the sausage is browned.
- Garnish with chopped parsley and pomegranate arils before serving.
