Apple Sausage Stuffed Acorn Squash

Ingredients

The squash

  • 3 whole acorn squash

The filling

  • 1 lb all natural sausage
  • 1 cup diced yellow onion
  • 1 whole granny smith apple, peeled and diced
  • 2 ½ cups baby spinach
  • 1 teaspoon fresh thyme
  • ¼ cup grated parmesan
  • to taste chopped parsley (for garnish)
  • to taste pomegranate arils (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. Place the prepared acorn squash on a baking sheet, flesh side down.
  3. Bake for 30-40 minutes, or until the squash is fork tender.
  4. In a large skillet, add the sausage and cook until browned, breaking it up with a wooden spoon.
  5. Add the onion and diced apple to the skillet and sauté for 3-4 minutes.
  6. Add the spinach and fresh thyme, sautéing until the spinach is wilted, about 2-3 minutes.
  7. Stir in the parmesan cheese and mix everything together.
  8. Once the acorn squash is cooked, remove it from the oven and switch the oven to HIGH Broiler.
  9. Flip the squash over and stuff it with the apple sausage mixture.
  10. Broil for 5 minutes, or until the sausage is browned.
  11. Garnish with chopped parsley and pomegranate arils before serving.
