Ingredients

The cake

  • 2 ½ cups oat flour
  • 1 cup fine grain almond flour
  • 1 ½ cups cane sugar
  • 4 teaspoons baking powder
  • ½ teaspoon sea salt
  • 1 ¼ cups dairy free milk
  • ½ cup unsweetened apple sauce
  • 2 tablespoons apple cider vinegar
  • 1 ½ teaspoons vanilla extract

The streusel topping

  • ¾ cup brown sugar or coconut sugar
  • 2 teaspoons cinnamon
  • ¼ cup melted butter or coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the oat flour, almond flour, cane sugar, baking powder, and sea salt.
  3. Make a well in the center and add the dairy-free milk, apple sauce, apple cider vinegar, and vanilla extract. Whisk until smooth.
  4. In a separate bowl, combine the brown sugar and cinnamon for the streusel topping.
  5. Pour half of the batter into a prepared square baking pan.
  6. Sprinkle half of the streusel mixture over the batter.
  7. Pour the remaining batter over the streusel layer.
  8. Top with the rest of the streusel mixture and drizzle melted butter or coconut oil over the top.
  9. Bake for 38-40 minutes, checking for doneness with a toothpick.
  10. Let cool in the pan for about an hour before cutting.
