Ingredients

  • 24 ounces chicken thighs, boneless skinless, cleaned and cut into chunks
  • 2 cups potatoes, peeled and cut into chunks
  • 1 cup carrots, peeled and sliced
  • 1 cup celery, trimmed and sliced
  • 1 cup onion, peeled and large diced
  • 2 cups mushrooms, washed and sliced
  • ½ cup green peas, frozen or fresh
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups chicken stock
  • 1 teaspoon poultry seasoning
  • to taste sea salt and black pepper
  • to garnish Italian parsley, finely chopped

Instructions

  1. Dredge the chicken pieces in seasoned flour.
  2. Heat olive oil in a large sauté pan and add the floured chicken, sautéing until golden brown.
  3. Remove the chicken and set aside.
  4. In the same pan, add butter and sauté the celery, onions, mushrooms, and carrots until caramelized.
  5. Add flour to make a roux and cook for a few minutes.
  6. Gradually add chicken stock to the roux, stirring until smooth.
  7. Add potatoes, chicken, peas, and poultry seasoning to the mixture.
  8. Bring to a boil, then reduce to a simmer and cook for about 30 minutes.
  9. Adjust consistency with more stock or water if needed, and season to taste.
  10. Serve garnished with parsley.
