Homestyle Chicken Stew

all-purpose flour

chicken stock

poultry seasoning

Italian parsley, finely chopped
Instructions
- Dredge the chicken pieces in seasoned flour.
- Heat olive oil in a large sauté pan and add the floured chicken, sautéing until golden brown.
- Remove the chicken and set aside.
- In the same pan, add butter and sauté the celery, onions, mushrooms, and carrots until caramelized.
- Add flour to make a roux and cook for a few minutes.
- Gradually add chicken stock to the roux, stirring until smooth.
- Add potatoes, chicken, peas, and poultry seasoning to the mixture.
- Bring to a boil, then reduce to a simmer and cook for about 30 minutes.
- Adjust consistency with more stock or water if needed, and season to taste.
- Serve garnished with parsley.
