Instructions
- Sauté shallots in olive oil over medium heat until tender.
- Add carrots, corn, chicken, and chipotle in adobo sauce; stir and sauté for a minute.
- Add chicken broth, salt, and pepper; simmer for 10 minutes.
- Remove from heat and stir in tortilla chips until wilted.
- Garnish with scallions and cilantro, and serve immediately.
