Instructions
- Prepare the marshmallow cream by whisking egg whites, sugar, cream of tartar, and salt together.
- Create a double boiler and whisk the mixture over boiling water for 6 minutes, then whip until glossy peaks form.
- Refrigerate the marshmallow cream until ready to use.
- For the macaron shells, process almonds, powdered sugar, and cocoa powder into a fine powder and sift.
- Whip egg whites, sugar, and cream of tartar until stiff peaks form, then fold in the dry mixture.
- Pipe the macaron batter onto parchment-lined baking sheets and let sit for 30 minutes.
- Preheat the oven to 350°F and bake the macarons for 13 minutes.
- For the ganache, microwave chocolate and cream together until melted and smooth.
- Assemble the macarons by piping marshmallow cream and ganache between two shells, then dip in crushed graham crackers.
