Instructions
- Preheat the oven to 350°F (176°C) with the rack in the lower third.
- Process the almonds in a food processor until fine, then combine with confectioners' sugar and process again.
- Sift the almond mixture through a fine-mesh sieve and repeat grinding if necessary.
- Whisk egg whites and granulated sugar by hand, then beat with a mixer until stiff peaks form.
- Optionally, add flavoring and food coloring, then fold in the dry ingredients until the batter flows like lava.
- Prepare a pastry bag and pipe the batter into 3/4-inch rounds on lined baking sheets.
- Tap the sheets to release air bubbles and bake one sheet at a time for about 13 minutes.
- Allow to cool, then fill half of the cookies with filling and top with the remaining halves.
