Ingredients

For the Cookie

  • 100 g egg whites (3 large eggs)
  • 140 g almond flour
  • 90 g granulated sugar
  • 130 g powdered sugar
  • 1 tsp vanilla
  • ¼ tsp cream of tartar

For the Buttercream

  • 1 cup unsalted butter, softened
  • 5 pieces egg yolks
  • ½ cup granulated sugar
  • 1 tsp vanilla
  • 3 tbsp water
  • 1 pinch salt

Instructions

  1. Sift confectioners sugar and almond flour into a bowl.
  2. Whisk egg whites until foamy, add cream of tartar, then slowly add granulated sugar until stiff peaks form.
  3. Add vanilla and food coloring if desired.
  4. Fold in dry ingredients gently until the mixture flows like lava.
  5. Pipe onto parchment-lined baking sheet and tap to release air bubbles.
  6. Let sit for 40 minutes, then bake at 300°F for 12-15 minutes.
  7. Cool completely before removing from the sheet.
  8. For buttercream, heat sugar and water until dissolved, then boil.
  9. Whisk egg yolks until foamy, then slowly add hot syrup.
  10. Cool, then mix in butter, vanilla, and salt until smooth.
  11. Pipe buttercream onto half the shells and sandwich with remaining shells.
  12. Age in the fridge for 1-3 days.
