Ingredients

  • 1.5 cups uncooked farro
  • 3 cups water
  • 1 lb. asparagus, chopped
  • 4 cups microgreens
  • ½ cup fresh mint, chopped
  • 2 cups sliced radishes
  • ½ cup sunflower seeds
  • 1 15-oz. can white beans, drained and rinsed
  • 4 oz. goat cheese, crumbled
  • ½ cup dried cranberries
  • ½ cup lemon vinaigrette

Instructions

  1. Cook farro in a saucepan with water until al dente, then strain and cool.
  2. Prepare an ice bath for blanching asparagus.
  3. Boil water and cook asparagus for two minutes, then transfer to the ice bath.
  4. Combine cooked farro, asparagus, and other salad ingredients in a bowl.
  5. Toss the salad with lemon vinaigrette and serve immediately.
