Farro Salad

lemon vinaigrette
Instructions
- Cook farro in a saucepan with water until al dente, then strain and cool.
- Prepare an ice bath for blanching asparagus.
- Boil water and cook asparagus for two minutes, then transfer to the ice bath.
- Combine cooked farro, asparagus, and other salad ingredients in a bowl.
- Toss the salad with lemon vinaigrette and serve immediately.
