Ingredients

The base

  • 1 package ramen noodles
  • 3 cups water
  • 1 tbsp vegetable stock paste

The toppings

  • 1 tbsp olive oil
  • 5 pieces brussels sprouts, thinly sliced
  • 1 tbsp white miso
  • 2 tbsp tamari or soy sauce
  • 1 clove garlic, pressed
  • 150-200 g silken tofu, cut into cubes
  • ½ tbsp chili sauce
  • ¼ cup chopped green onion
  • ½ cup bean sprouts

The egg (optional)

  • 1-2 pieces soft boiled eggs

Instructions

  1. Heat olive oil in a medium pot over medium heat.
  2. Add sliced brussels sprouts and white miso, sauté for 4-5 minutes until softened.
  3. Stir in tamari or soy sauce, vegetable stock paste, and 2½ cups water, then bring to a simmer.
  4. While waiting for the broth to simmer, prepare the soft-boiled egg by boiling it for 7-8 minutes, then place it in ice water.
  5. Once the broth is simmering, add the ramen noodles and cook according to package instructions.
  6. Stir in pressed garlic and tofu, then adjust seasoning with more tamari or soy sauce if needed.
  7. Serve the ramen in bowls, garnished with green onion, halved soft-boiled egg, chili sauce, and bean sprouts.
