Ingredients

Main Ingredients

  • 3 stalks celery, chopped
  • 2-3 medium carrots, chopped
  • 1-2 medium red onions, or leeks or shallots
  • 3-5 cloves garlic
  • a few sprigs thyme
  • a big handful parsley
  • 2-3 cups frozen veggie scraps
  • 10-12 cups filtered water

Optional Add-Ins

  • 1 cup mushrooms
  • 1 cup bell peppers
  • ½ teaspoon salt
  • 10 pieces peppercorns
  • 1 piece chili pepper or scotch bonnet pepper
  • ¼ cup liquid aminos or coconut aminos or low sodium soy sauce

Instructions

  1. In a pot over high heat, add all ingredients except for water and sweat for about 3 minutes.
  2. Add any optional ingredients and stir in the water.
  3. Bring the mixture to a boil, then reduce to a simmer for 1 hour.
  4. Remove from heat and allow to cool.
  5. Strain the broth into storage containers using cheesecloth or a fine mesh strainer.
  6. Stir in liquid aminos if using, and store in the fridge or freeze for later use.
