Easy 1-Pot Vegetable Broth

Instructions
- Heat a large pot over medium heat and add oil or water.
- Sauté onion, garlic, carrots, and celery with salt and pepper for about 5 minutes until softened.
- Add water, greens, parsley, thyme, rosemary, bay leaves, and more salt and pepper, and bring to a boil.
- Reduce heat to a simmer and stir in nutritional yeast and tomato paste.
- Simmer for at least 30 minutes, preferably 1 hour, to deepen the flavor.
- Taste and adjust seasoning as needed.
- Let cool slightly, then strain into storage jars.
- Cool completely before sealing and store in the refrigerator or freezer.
