Easy 1-Pot Vegetable Broth

Ingredients

  • 1 Tbsp avocado or coconut oil
  • 1 medium onion (with skins, finely chopped)
  • 4 cloves garlic (with skins, finely chopped)
  • 4 medium carrots (with skins, finely chopped)
  • 4 stalks celery (finely chopped)
  • 1-2 tsp sea salt (plus more to taste)
  • 1-2 tsp black pepper (plus more to taste)
  • 9-10 cups filtered water
  • 1 cup chopped sturdy greens (kale, collards, etc.)
  • ½ cup chopped fresh parsley
  • 1 small handful fresh thyme
  • 1 small handful fresh rosemary
  • 2 whole bay leaves
  • 3-4 Tbsp nutritional yeast
  • 4-5 Tbsp tomato paste

Instructions

  1. Heat a large pot over medium heat and add oil or water.
  2. Sauté onion, garlic, carrots, and celery with salt and pepper for about 5 minutes until softened.
  3. Add water, greens, parsley, thyme, rosemary, bay leaves, and more salt and pepper, and bring to a boil.
  4. Reduce heat to a simmer and stir in nutritional yeast and tomato paste.
  5. Simmer for at least 30 minutes, preferably 1 hour, to deepen the flavor.
  6. Taste and adjust seasoning as needed.
  7. Let cool slightly, then strain into storage jars.
  8. Cool completely before sealing and store in the refrigerator or freezer.
