Instructions
- Soak the Swedish red peas in water overnight after simmering them for 10 minutes.
- Divide the anko sweet red bean paste into 6 balls.
- Mix Shiratamako, sugar, and water in a bowl, cover with cling wrap, and microwave for 1 minute and 30 seconds.
- Stir the mixture, cover again, and microwave for an additional minute.
- Transfer the mochi dough onto a tray dusted with Katakuriko.
- Spread the mochi dough and place the Swedish red peas on top, then fold the dough over.
- Flatten a portion of the dough, place an anko ball in the center, and wrap it up to form a round shape.
- Repeat the process for the remaining dough and filling.
