Ingredients

The mochi

  • 1 ⅔ cups Shiratamako (rice flour)
  • 2 tbsp caster sugar
  • 0.8 cup water
  • 1 cup Katakuriko (potato starch)

The filling

  • 12 tbsp Anko sweet red bean paste

Optional ingredients

  • 2 tbsp Swedish red peas (dried)

Instructions

  1. Soak the Swedish red peas in water overnight after simmering them for 10 minutes.
  2. Divide the anko sweet red bean paste into 6 balls.
  3. Mix Shiratamako, sugar, and water in a bowl, cover with cling wrap, and microwave for 1 minute and 30 seconds.
  4. Stir the mixture, cover again, and microwave for an additional minute.
  5. Transfer the mochi dough onto a tray dusted with Katakuriko.
  6. Spread the mochi dough and place the Swedish red peas on top, then fold the dough over.
  7. Flatten a portion of the dough, place an anko ball in the center, and wrap it up to form a round shape.
  8. Repeat the process for the remaining dough and filling.
